Baked Breakfast Nachos with Eggs and Black Beans

This breakfast nachos recipe has about 37 grams of protein per serving and takes 35 minutes start to finish. The protein comes from eggs, black beans and real cheddar, not a scoop of powder, so it tastes like an actual breakfast plate instead of a protein shake poured over chips.

I bake the chips with beans and cheese first so everything melts together, then scramble the eggs separately and pile them on hot out of the oven.

I scramble the eggs in my garage-sale cast iron pan because it holds an even heat and keeps the curds soft instead of dry. Pull them off the burner while they still look a little glossy, they keep cooking on their own.

The one thing that will ruin this dish is letting wet beans sit on the chips too long before baking. Drain them well or the bottom layer turns soggy before the cheese even melts.

This makes four full plates at about 360 grams each, enough for an actual breakfast, not a snack.

Why You’ll Love This Recipe

  • 37 grams of real protein from eggs, beans and cheese
  • Ready in 35 minutes start to finish
  • Uses just one sheet pan and one skillet
  • About 360 grams per plate, an actual breakfast portion

Ingredient Notes

  • Eggs: Large eggs give the base protein here. Whisk them with a splash of water instead of milk if you want slightly fluffier curds.
  • Black beans: Canned beans work fine, just drain and rinse them well so they don’t turn the chips soggy under the cheese.
  • Tortilla chips: Use a sturdy, restaurant-style chip that can hold up under wet toppings. Thin grocery-store chips break apart fast.
  • Cheddar cheese: Shred it yourself off a block if you can, pre-shredded bags are coated in starch and melt less evenly.
  • Avocado: Add it after baking, not before, so it stays cool and firm instead of turning warm and mushy.
  • Greek yogurt: Stands in for sour cream and adds a little extra protein. Sour cream works too, but skip it if you want the higher protein count.

Ingredients

Nacho Base
  • 140 g tortilla chips (about 5 cups); sturdy, restaurant-style
  • 1 can black beans, canned (425 g / 15 oz); drained and rinsed
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 113 g sharp cheddar cheese (1 cup); shredded
Scrambled Eggs
  • 12 large eggs
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
Toppings
  • 1 avocado medium (about 150 g); diced
  • 1/2 cup pico de gallo or salsa (120 g)
  • 1/4 cup plain Greek yogurt (60 g); stands in for sour cream
  • 2 tbsp fresh cilantro chopped
  • 1 lime cut into wedges
  • jalapeno optional; sliced

Method

  1. Heat the oven to 200 C / 400 F. Line a sheet pan (33 x 46 cm / 13 x 18 inch) with foil or parchment.
  2. Spread the tortilla chips in an even layer across the pan.
  3. In a 1-quart / 1L saucepan, warm the black beans with cumin, chili powder and a pinch of salt over medium heat for 3 to 4 minutes, stirring, until heated through and any excess liquid has cooked off.
  4. Scatter the warm beans over the chips, then top with the shredded cheddar. Bake for 6 to 8 minutes, until the cheese is fully melted and the chip edges start to brown.
  5. While the nachos bake, heat the olive oil in a 10-inch nonstick or cast-iron skillet over medium-low heat. Whisk the eggs with salt and pepper in a mixing bowl, then pour into the skillet.
  6. Scramble the eggs, stirring often with a wooden spoon, for 4 to 5 minutes, until the curds are soft-set and glossy with no runny liquid left. Pull them off the heat right at that point, they keep cooking on their own and turn rubbery if left too long.
  7. Remove the nachos from the oven and immediately spoon the scrambled eggs over the top while everything is still hot.
  8. Add the diced avocado, pico de gallo and dollops of Greek yogurt, then scatter the chopped cilantro over the top.
  9. Squeeze fresh lime juice over the nachos, add jalapeno slices if using, and serve right away before the chips soften.

Notes

  • Rinse canned beans to cut sodium and keep the nachos from getting watery.
  • Use a 10-inch cast iron pan for eggs if you have one, it holds heat evenly.
  • Assemble nachos right before serving, they don't hold well as leftovers.
  • Shred your own cheddar block, pre-shredded bags melt less evenly.

Tips for Success

  • Drain and rinse the black beans well before warming them, so the nachos don’t turn soggy under the cheese.
  • Pull the eggs off the heat while they still look slightly glossy, they keep cooking from residual heat in the pan.
  • Spread the chips in a single, even layer so every chip gets cheese and beans, not just the ones on top.
  • Warm the beans in a saucepan first instead of straight from the can, they melt into the cheese better that way.
  • Build the eggs onto the nachos right after both come off the heat, and serve immediately before the chips lose their crunch.

Variations

  • Swap black beans for pinto beans or refried beans if that’s what’s in your pantry, protein stays close to the same.
  • Use pepper jack instead of cheddar and add sliced jalapenos under the eggs for more heat throughout the dish.
  • Stir 2 cups shredded rotisserie chicken in with the beans instead of eggs for a dinner version of the same nachos.

Storage and Reheating

Breakfast nachos are best eaten right after you build them, since the chips turn soft under the eggs and beans within about 15 minutes. I don’t recommend storing the fully assembled plate.

If you want a head start, cook the bean mixture and shred the cheese up to 3 days ahead and keep them in separate containers in the fridge. Scramble the eggs fresh right before serving, since reheated eggs turn rubbery and dry fast.

Leftover scrambled eggs and bean mixture on their own keep in the fridge for 3 days and reheat fine in a covered skillet over low heat for 2 to 3 minutes. Build a fresh batch of nachos with new chips rather than reheating an already-assembled plate.

Serving Suggestions

Set this out with fresh orange juice or grapefruit and a pot of coffee, the acid cuts through the cheese and eggs well. A small bowl of extra pico de gallo or hot sauce on the side lets everyone adjust their own plate.

This also works as a lazy weekend brunch spread if you double the bean and cheese layer and let people build their own plates straight off the sheet pan.

For a lighter side, a simple bowl of orange slices or melon balances out how rich the cheese and eggs are.

FAQ

How do I know when the scrambled eggs are done for breakfast nachos?

The eggs are ready when the curds look soft-set and glossy with no runny liquid pooling in the pan, usually after 4 to 5 minutes over medium-low heat. Pull them off right at that point since they keep firming up off the heat. Waiting until they look fully dry in the skillet means they’ll turn rubbery once piled on the hot nachos.

Can I use refried beans instead of black beans in this breakfast nachos recipe?

Yes, refried beans work fine and actually help the beans stick to the chips instead of rolling off. Warm them with a splash of water so they spread easily, then skip the cumin and chili powder since refried beans are already seasoned. Protein per serving stays close to the same, around 35 to 37 grams.

Can I prep breakfast nachos with eggs and black beans ahead of time?

Not as a fully assembled plate, the chips go soft under the wet toppings within about 15 minutes. You can cook the bean mixture and shred the cheese up to 3 days ahead and store them separately in the fridge, then scramble fresh eggs and build the nachos right before serving.

What toppings go well on breakfast nachos with eggs and black beans?

Diced avocado, pico de gallo, a spoon of plain Greek yogurt, and chopped cilantro all work well and add texture without making the chips soggy fast. A squeeze of lime and a few pickled jalapeno slices give the plate some acidity to cut through the cheese and eggs.

Are breakfast nachos with eggs and black beans gluten free?

They can be, since eggs, black beans, cheese and corn tortilla chips don’t naturally contain gluten. Check your specific chip bag though, some brands are processed in facilities that also handle wheat, so look for a certified gluten-free label if that matters for you.

What’s the difference between breakfast nachos and regular nachos?

Breakfast nachos swap the usual ground beef or shredded chicken for scrambled eggs and lean on black beans and cheese for the protein instead. The base method is the same, chips get layered with beans and cheese and baked until melted, then topped fresh once out of the oven.

I taught middle school band for twelve years. At 38 I started lifting weights at the YMCA down the hill, mostly because my back hurt and my doctor suggested it. Somebody at the gym told me to track what I ate for a week. I did. I was eating 58 grams of protein a day, which is roughly one chicken breast and a lot of crackers.

Every plan I found told me to eat grilled chicken, rice and broccoli. I tried it for eleven days. I hated it. My husband hated it. My kids ate cereal for dinner twice.

So I stopped looking for diet food and went back to what I already cooked. Shepherd's pie. Chicken and dumplings. Baked ziti. Breakfast that is not a shake. I kept the dish and changed the math: more of the protein, less of the filler, cottage cheese where it would hide, lentils in the ground meat, Greek yogurt instead of half the cream.
