These black bean and turkey burrito bowls have 48 g of protein per serving and take 40 minutes. The protein comes from lean ground turkey, black beans, cheddar and Greek yogurt, not powder, so it tastes like a burrito bowl and nothing else.

One bowl is about 550 g of food. Rice goes on the bottom, then the seasoned turkey and bean mix, then corn, cheese, avocado and a spoonful of lime yogurt. The yogurt replaces sour cream and adds about 5 g of protein per bowl.

The one thing that goes wrong is dry turkey. Ground turkey at 93 percent lean has little fat to forgive overcooking, so take it to 165 F / 74 C and no further, and let the beans simmer in a splash of water to keep the mix moist.

Canned beans and cheese make this salty. Rinse the beans and taste before you add more salt at the end.

Why You’ll Love This Recipe

  • 48 g of protein per bowl from real food, no powder
  • Rice and turkey cook at the same time, 40 minutes total
  • Lime Greek yogurt replaces sour cream and adds protein
  • Turkey mix and rice reheat well for four days of lunches

Ingredient Notes

  • 93% lean ground turkey: This gives about 85 g of protein across the pot. Ground chicken works at the same weight. Skip 99% lean turkey, which turns chalky.
  • canned black beans: Two 425 g / 15 oz cans give roughly 500 g drained and about 44 g of protein. Rinse them well to wash off the salty canning liquid. Pinto beans work if that’s what you have.
  • plain nonfat Greek yogurt: Use plain, not vanilla. Whole-milk Greek yogurt tastes richer and adds about 2 g of fat per spoonful, with slightly less protein.
  • sharp cheddar: Shred it from a block if you can, since it melts smoother than bagged. Pepper jack is a good swap for more heat.
  • long-grain white rice: Rinse it until the water runs mostly clear so the grains stay separate. Brown rice works but needs 35 to 40 minutes of simmering.

Ingredients

Rice
  • 200 g long-grain white rice (1 cup plus 2 tbsp); rinsed in a sieve
  • 360 ml water (1 1/2 cups)
  • 1/4 tsp kosher salt
Turkey and bean mix
  • 1 tbsp olive oil
  • 1 yellow onion medium (about 150 g); diced
  • 3 cloves garlic minced
  • 450 g 93% lean ground turkey (1 lb)
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 3/4 tsp kosher salt
  • 1 tbsp tomato paste
  • 2 cans canned black beans (425 g / 15 oz each); drained and rinsed, about 500 g drained
  • 150 g frozen corn (1 cup); thawed
  • 120 ml water (1/2 cup)
Lime yogurt
  • 200 g plain nonfat Greek yogurt (3/4 cup)
  • 2 limes zest and juice of 1 for the yogurt, the other cut into wedges
  • 1 pinch kosher salt
Toppings
  • 100 g sharp cheddar (1 cup); shredded
  • 1 ripe avocado large; sliced just before serving
  • 120 g salsa (1/2 cup)
  • 15 g fresh cilantro (1/4 cup); chopped

Method

  1. Rinse the rice in a fine-mesh sieve until the water runs mostly clear. Dice the onion, mince the garlic, drain and rinse the beans, and chop the cilantro.
  2. Combine the rice, 360 ml water and 1/4 tsp salt in a 3-quart / 2.8 L saucepan and bring to a boil. Cover, drop the heat to low and cook for 15 minutes. Take it off the heat and leave it covered while you cook the turkey, then fluff with a fork.
  3. Heat the oil in a 30 cm / 12-inch deep skillet over medium-high heat for 2 minutes. Cook the onion for 4 minutes, stirring, until soft with golden edges. Add the garlic and stir for 30 seconds.
  4. Add the turkey and break it into small crumbles with a wooden spoon. Cook for 7 to 8 minutes until no pink remains and it reads 165 F / 74 C. Stir in the chili powder, cumin, paprika, 3/4 tsp salt and tomato paste, and cook for 1 minute until fragrant and the paste darkens.
  5. Add the beans, corn and 120 ml water. Simmer over medium heat for 5 minutes, stirring now and then, until the beans are hot and most of the liquid has cooked down. Taste and add a pinch more salt if needed.
  6. Stir the plain nonfat Greek yogurt, the zest and juice of 1 lime, and a pinch of salt in a small bowl. Divide the rice among 4 bowls, about 150 g each, and top with the turkey and bean mix. Add the cheddar, sliced avocado, salsa, cilantro and a spoonful of lime yogurt, and serve with lime wedges.

Notes

  • Rinse the rice until the water runs mostly clear so the grains stay separate.
  • Take the turkey to 165 F / 74 C and no higher.
  • Shred cheddar from a block if you can, since it melts smoother than bagged.
  • Portion all toppings before the turkey finishes so assembly takes under 5 minutes.

Tips for Success

  • Pull the turkey as soon as no pink remains and an instant-read thermometer reads 165 F / 74 C, because lean meat dries out fast.
  • Rinse the canned beans in a sieve until the foam disappears, then taste the finished mix before adding any more salt.
  • Stir the tomato paste into the spices and turkey for a full minute so it darkens and loses its raw, tinny taste.
  • Thin the lime yogurt with 1 teaspoon of water if it’s too stiff to drizzle, which keeps the flavor and the protein.
  • Slice the avocado right before assembling and squeeze lime over the cut sides so it stays green on the bowl.

Variations

  • Use 450 g of 90% lean ground beef instead of turkey for a richer bowl. Protein stays within a couple of grams.
  • Swap in brown rice and start it first, simmering 35 to 40 minutes, since it takes much longer than white rice.
  • Stir 1 tablespoon of minced chipotle in adobo into the turkey with the spices for smoky heat.

Storage and Reheating

Store the turkey and bean mix and the rice in airtight containers in the fridge for up to 4 days. Keep the lime yogurt, salsa, avocado and cilantro separate and add them fresh. Cut avocado browns overnight, so slice it the day you eat it.

To reheat, put a portion of rice and turkey mix in a bowl, add 1 tablespoon of water, cover and microwave on full power for 2 to 3 minutes, stirring halfway. It’s ready when it’s steaming hot throughout at 165 F / 74 C. Add the cold toppings after.

The turkey mix and the rice freeze well for up to 3 months in flat zip bags, which stack easily in a chest freezer. Thaw overnight in the fridge before reheating. Don’t freeze the yogurt or avocado.

Serving Suggestions

Set the cheddar, avocado, salsa, cilantro and lime yogurt out in separate bowls and let everyone build their own. Lime wedges and hot sauce on the table help people adjust the heat.

The bowls are already about 550 g each, so you don’t need a side. If you want one, tortilla chips with extra salsa or shredded romaine tossed in lime juice and a pinch of salt both work.

For lunches, pack the rice and turkey mix in one container and the cold toppings in another so nothing gets soggy before you eat.

FAQ

Why is the ground turkey in my burrito bowl dry and crumbly?

It cooked too long. Ground turkey at 93 percent lean is done once no pink remains and it reads 165 F / 74 C, so stop there. The 120 ml of water simmered with the beans and spices turns the pan into a light sauce and keeps the crumbles moist.

Can I use ground chicken instead of ground turkey in burrito bowls?

Yes, use the same 450 g and cook it the same way. Ground chicken has about the same protein as 93% lean turkey, so the bowls stay near 48 g each. Cook it to 165 F / 74 C and expect a slightly softer, milder crumble.

Can I freeze black bean and turkey burrito bowls?

Freeze the turkey and bean mix and the cooked rice, but not the toppings. Both keep for 3 months in flat zip bags. Thaw overnight in the fridge, then microwave until steaming hot at 165 F / 74 C. Add fresh yogurt, avocado and cheese afterward.

What sides go with black bean and turkey burrito bowls?

Tortilla chips with salsa and a lime-dressed romaine salad are the easiest. Roasted sweet potato cubes also work if you want more food on the table. Each bowl is already about 550 g, so a side is optional.

How do I make turkey burrito bowls dairy free?

Leave out the cheddar and swap the yogurt for mashed avocado with lime juice and a pinch of salt. Both changes together drop the protein by about 11 g per bowl, so each bowl lands near 37 g. The turkey, beans and rice stay the same.

What’s the difference between a burrito bowl and a burrito?

A burrito bowl serves the same fillings over rice instead of wrapping them in a flour tortilla. It’s easier to portion, eat with a fork and pack for lunch with the toppings stored separately. The fillings here would work in a tortilla if you want one.

Maren Ostlund

I taught middle school band for twelve years. At 38 I started lifting weights at the YMCA down the hill, mostly because my back hurt and my doctor suggested it. Somebody at the gym told me to track what I ate for a week. I did. I was eating 58 grams of protein a day, which is roughly one chicken breast and a lot of crackers.

Every plan I found told me to eat grilled chicken, rice and broccoli. I tried it for eleven days. I hated it. My husband hated it. My kids ate cereal for dinner twice.

So I stopped looking for diet food and went back to what I already cooked. Shepherd's pie. Chicken and dumplings. Baked ziti. Breakfast that is not a shake. I kept the dish and changed the math: more of the protein, less of the filler, cottage cheese where it would hide, lentils in the ground meat, Greek yogurt instead of half the cream.
