Jump to Recipe

Roasted honey mustard chicken thighs with green beans has about 40 g of protein per serving and takes 60 minutes start to finish, including a 15-minute marinade. The protein comes from chicken thighs, not powder, so it tastes like the real thing.

Each plate gets two thighs and a big pile of beans, about 320 g of food. The sauce is Dijon, honey, olive oil, vinegar and garlic. Nothing you need to hunt for.

One trade-off to know about. Honey scorches at 425 F, and if you glaze the chicken from the start, the edges go black before the middle reaches 175 F / 79 C. So I hold back 3 tablespoons of sauce and brush it on for the last 5 minutes.

Thighs also forgive a few extra minutes in the oven, which breasts don’t. That makes this a good one for nights when dinner runs late.

Why You’ll Love This Recipe

  • About 40 g protein per serving, all from chicken
  • Two sheet pans and one oven, so cleanup stays short
  • Glaze goes on late, so it browns without burning
  • Sauce uses pantry staples: Dijon, honey, vinegar, garlic

Ingredient Notes

  • boneless skinless chicken thighs: Look for thighs around 100 g each so they cook at the same pace. Bone-in thighs need a longer roast and aren’t what this card is written for.
  • Dijon mustard: Smooth Dijon gives the sauce body. Whole-grain mustard works too and adds texture, but yellow ballpark mustard is too sharp here.
  • honey: Maple syrup swaps in 1 to 1 and browns the same way. The flavor is a little woodsier and the sauce a little thinner.
  • green beans: Fresh beans blister best. Frozen work if you don’t thaw them, but they come out softer.
  • apple cider vinegar: It keeps the glaze from tasting flat and sugary. Lemon juice is a fair substitute in the same amount.

Ingredients

Chicken and honey mustard sauce
  • 800 g boneless skinless chicken thighs (8 thighs); trimmed of loose fat, patted dry
  • 3 tbsp Dijon mustard
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
Green beans
  • 600 g green beans stem ends trimmed
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt

Method

  1. Heat the oven to 220 C / 425 F with racks in the upper and lower thirds. Line one 33 x 46 cm / 13 x 18-inch sheet pan with parchment for the chicken.
  2. Whisk the Dijon, honey, 2 tbsp olive oil, vinegar, garlic, smoked paprika and black pepper in a medium bowl until smooth. Spoon 3 tbsp into a small clean bowl and set it aside for glazing.
  3. Pat the thighs dry and trim loose fat. Toss them in the medium bowl with the sauce and 1 tsp salt until every piece is coated, then let them sit for 15 minutes while the oven heats.
  4. Trim the green beans and toss them on a second 33 x 46 cm / 13 x 18-inch sheet pan with 1 tbsp olive oil and 1/2 tsp salt. Spread them in a single layer with a little space between.
  5. Lay the thighs on the parchment-lined pan with space between each one. Put the chicken on the upper rack and the beans on the lower rack. Roast for 25 minutes, stirring the beans once at the 12-minute mark.
  6. Pull both pans out. Set the beans aside once they're tender with browned, blistered edges. Brush the reserved 3 tbsp sauce over the thighs and return only the chicken to the oven for 5 minutes, until the glaze is amber and sticky and the thickest thigh reads 175 F / 79 C.
  7. Divide the beans and chicken among 4 plates, 2 thighs per person, and spoon any pan juices over the chicken. Serve right away.

Notes

  • Marinate the chicken for 15 minutes while the oven heats.
  • Brush on the reserved glaze only for the last 5 minutes.
  • Keep beans and chicken on separate pans so neither one steams.
  • Wash hands, board and knife after handling raw chicken.

Tips for Success

  • Pat the thighs dry with paper towels and trim loose fat so the marinade clings and the edges brown instead of steaming.
  • Spoon 3 tablespoons of sauce into a clean bowl before the chicken touches the rest, since used marinade can’t go back on cooked chicken.
  • Spread the green beans in a single layer on their own sheet pan so they blister instead of steaming into limp pods.
  • Push an instant-read thermometer into the thickest thigh and pull the pan at 175 F / 79 C, not by color alone.
  • Line the chicken pan with parchment so dripped honey doesn’t weld to the metal and the pan scrapes clean.

Variations

  • Swap the green beans for 600 g broccoli florets and roast them the same 25 minutes until the tips are dark and crisp.
  • Add 1 teaspoon red pepper flakes to the sauce for a hot-honey style glaze that still browns evenly.
  • Use whole-grain mustard for half of the Dijon to get a coarser, tangier coating with visible seeds.

Storage and Reheating

Leftover honey mustard chicken thighs and green beans keep 3 to 4 days in the fridge in an airtight container. Cool them within 2 hours of cooking, and keep the beans in a separate container so the glaze doesn’t make them soggy.

To reheat, cover the chicken with foil and warm it in a 180 C / 350 F oven for 12 to 15 minutes. A microwave works too at 70% power for 90 seconds to 2 minutes. The beans lose their blistered edges either way, but they still taste fine.

The chicken freezes for 2 to 3 months, and the beans don’t. For Sunday prep, I cook a double batch of chicken, freeze half flat in a bag, and roast fresh beans on the night I eat it.

Serving Suggestions

Serve the thighs and beans straight from the oven, within 10 minutes of leaving it, while the beans are still blistered and the glaze is sticky. Spoon any pan juices over the chicken.

Rice, egg noodles or mashed potatoes soak up the extra glaze. A 150 g scoop of cooked white rice adds about 195 kcal and 4 g protein, so the numbers on the card are for chicken and beans only.

A squeeze of lemon over the beans just before eating brightens the plate. A spoonful of extra Dijon on the side works for anyone who wants more bite.

FAQ

How do I know when honey mustard chicken thighs are done?

Honey mustard chicken thighs are done at 175 F / 79 C in the thickest part, measured with an instant-read thermometer. The glaze should look deep amber and slightly tacky, and the juices should run clear. Thighs stay juicy past that point, so a few extra minutes won’t hurt.

Can I use frozen green beans for the roasted green beans?

Yes, but don’t thaw them first. Spread them straight from the freezer on the sheet pan with the oil and salt, and put them in the oven 10 minutes before the chicken. They come out softer and less blistered than fresh beans, because frozen ones release water as they heat.

Can I freeze honey mustard chicken thighs with the green beans?

Freeze the chicken, not the beans. Cooked thighs keep 2 to 3 months in a freezer bag with the air pressed out, and they thaw overnight in the fridge. Roasted green beans turn limp and watery after freezing, so roast a fresh pan when you reheat the chicken.

What goes well with honey mustard chicken thighs and green beans?

Egg noodles, white rice or mashed potatoes soak up the extra glaze best. A 150 g scoop of cooked rice adds about 195 kcal and 4 g protein. Dinner rolls work too. The beans already cover the vegetable side, so you don’t need a salad.

Is honey mustard chicken with roasted green beans gluten free and dairy free?

Yes to both as written. There’s no flour, butter, cream or soy sauce in it, and it’s nut-free too. Check the Dijon label, since a few brands use malt vinegar or add wheat-based thickeners, and swap in a brand that says gluten free if you need to.

Maren Ostlund

I taught middle school band for twelve years. At 38 I started lifting weights at the YMCA down the hill, mostly because my back hurt and my doctor suggested it. Somebody at the gym told me to track what I ate for a week. I did. I was eating 58 grams of protein a day, which is roughly one chicken breast and a lot of crackers.

Every plan I found told me to eat grilled chicken, rice and broccoli. I tried it for eleven days. I hated it. My husband hated it. My kids ate cereal for dinner twice.

So I stopped looking for diet food and went back to what I already cooked. Shepherd's pie. Chicken and dumplings. Baked ziti. Breakfast that is not a shake. I kept the dish and changed the math: more of the protein, less of the filler, cottage cheese where it would hide, lentils in the ground meat, Greek yogurt instead of half the cream.
