Ingredients

Roasted Strawberries
  • 2 cups strawberries, hulled and halved (300 g)
  • 2 tbsp honey, for roasting divided, 1 tbsp used for roasting
  • 1/2 tsp vanilla extract
Yogurt Bowls
  • 2 cups plain nonfat Greek yogurt (560 g); not flavored
  • 1/3 cup granola (40 g); gluten-free if needed
  • 1/4 cup almonds, chopped (30 g)
  • 2 tbsp chia seeds (20 g)
  • 1 tbsp honey, for drizzling
  • 1/4 tsp ground cinnamon for dusting

Method

Roast the Strawberries
  1. Heat the oven to 200C / 400F. Line a 9 x 13-inch sheet pan with parchment paper.
  2. Toss the halved strawberries in a bowl with 1 tbsp honey and the vanilla extract until coated.
  3. Spread the strawberries cut-side up in a single layer on the sheet pan, leaving space between pieces.
  4. Roast for 15 to 18 minutes, checking at 12 minutes, until strawberries are soft and juices bubble at the edges.
  5. Remove from the oven and let the strawberries cool on the pan for 3 to 4 minutes, the juice thickens slightly as it sits.
Assemble the Bowls
  1. While the strawberries roast, divide the Greek yogurt between two bowls.
  2. Top each bowl with granola, chopped almonds, and chia seeds.
  3. Spoon the warm roasted strawberries and their juices over the yogurt.
  4. Drizzle with the remaining 1 tbsp honey, dust with cinnamon, and serve right away.

Notes

  • Use a light-colored sheet pan, dark pans can scorch the honey before strawberries soften.
  • Nonfat Greek yogurt keeps protein at 36g, whole milk yogurt drops it closer to 32g.
  • Double the roasted strawberries, they keep well and taste good on oatmeal too.
  • Check strawberries at 12 minutes, ovens vary and honey burns fast past 18 minutes.
