Ingredients

  • 2 sourdough bread thick slices (about 50 g each)
  • 1.5 tbsp olive oil divided
  • 300 g low-fat cottage cheese small curd
  • 4 large eggs
  • 2 tbsp hot honey store-bought or homemade
  • 1/2 tsp red pepper flakes only if making hot honey at home
  • flaky sea salt to taste
  • black pepper to taste, cracked
  • 1 tbsp fresh chives chopped; optional

Method

Cook the Jammy Eggs
  1. Bring water to a rolling boil in a 2-quart saucepan. Lower the 4 eggs in gently with a slotted spoon.
  2. Set a timer for 6.5 minutes for a jammy, soft-set yolk. While the eggs cook, fill a mixing bowl with ice water.
  3. Transfer the eggs straight to the ice bath and let them sit for 5 minutes. Peel and slice each egg in half lengthwise.
Make the Hot Honey
  1. Warm the honey and red pepper flakes in a small saucepan over low heat for 2 minutes, until fragrant. Skip this step if using store-bought hot honey.
Toast and Assemble
  1. Drain the cottage cheese in a fine-mesh strainer for 5 minutes if it looks watery.
  2. Heat 1 tbsp olive oil in a 10-inch cast iron skillet over medium heat. Toast the bread 2 to 3 minutes per side, until golden brown and crisp at the edges.
  3. Spread 150 g cottage cheese over each warm slice of toast. Season with a pinch of salt and cracked black pepper.
  4. Top each toast with 2 egg halves, cut side up. Drizzle with hot honey and a pinch of flaky salt.
  5. Scatter chopped chives over the top and serve right away while the toast is still warm.

Notes

  • Boil eggs for exactly 6.5 minutes for a jammy yolk, not a hard-set one.
  • Drain cottage cheese if it looks watery before spreading on toast.
  • Use store-bought hot honey like Mike's Hot Honey to skip the stovetop step.
  • Toast bread just before assembling so it stays crisp under the cottage cheese.
